Amarone
Amararone is a legendary, assertive wine from the Valpolicella area in northern Italy. Its uniqueness and character comes from the addition of partially dried grapes during fermentation. Dried grapes boost flavour concentration and create an intensity not found in regular wines. After 2 years of development, Cellar Craft has created a new process resulting in the most impressive Amarone style that you have likely ever experienced. Our new "SUPER PACK" of crushed grapes and whole, sun-dried grapes is added to the juices for traditional on the skins fermentation character and the maximum infusion of the concentrated, natural essence within the dried grapes.

Amarone della Valpolicella Classico 4 - 4-5 - 0
This opulent wine from Veneto, Italy is not for the faint hearted! Chewy tannins, firm palate packed with dark rich fruit and deep garnet colour defines this masterpiece. Fermented on Sangiovese Genuwine Winery Dried Grape Skins and toasted French oak chips, this is an assertively full-bodied wine with a delectable nose of black cherries, dark chocolate and well balanced oak. It offers ripe dark fruit flavours cradled by firm tannins culminating in an almost endless finish.

Argentinean Malbec
Originally a minor grape in Bordeaux, France, Malbec has been elevated to greatness in the higher altitude vineyards of Argentina, especially in the Mendoza region below the towering Andres. Our Malbec is distinguished by its dark, derise structure; full, rounded mouth-fell; prominent, lush flavours of ripe cherry, black currant and black berry; subtle notes of clove, vanilla and caramel with background suggestions of earthiness. Cellar Craft's new, 18 litre format employs juices and concentrates fermented with the skins and solids from over 12 pounds of virgin, varietal grapes creating exceptional aromatics and depth of flavour. Premium, lightly toasted Hundarian oak is used in our exclusive 2-stage oaking procedure. This wine begins to show its character after 3 or 4 months in the bottle but is built for extended aging. It should continue to develop for 2 years or more..

Cabernet-Merlot - Bare Ridge Vineyard, Walla Walla Washington
Walla Walla Cabernets and Merlots consistently rank in top 10 lists of the finest from the Americas. A classic Bordeaux blend of Cabernet and merlot but typifies the unique Walla Walla profile of intense fruit, spice flavours and aromatics. Notes of currant, cherry and plum are backed by hints of black pepper, anise and coffee.

Cabernet Sauvignon 3 - 3 - 0
A distinctive Cabernet Sauvignon in an appealing rich, complex style, this full bodied wine has a deep garnet colour with an appealing aroma of plump blackberries, sweet vanilla and fresh violets. Notes of blackberries and cherries grace the palate interwoven with rich tannins and pepper spice extracted from the proprietary Winery Grape Skins.

Cabernet-Shiraz - White Sands & Rattlesnake Valley Vineyard, Yakima Valley Washington
A blockbuster with a rush of blackberry, plum, cherry, and candied orange fragrances. Followed by flavours of currant, fig, cedar, and spice intertwined with a beautiful balance of toasted oaks. Rich, elegant finish. The powerful fruit flavours dominate after 2 – 3 months aging. The full complexity starts to be revealed after 6 to 12 months.

Carmenére
Colchagua Valley, Chile
Multi-flavoured Carmenere from Colchagua shows best when processed with extended oak contact. Break-through, two-stage oaking system. Hungarian oak shavings are introduced at the start of fermentation, then lightly toasted Hungarian oak cubes are used for further extraction during the post-fermentation stage. The oaks together add surprisingly soft tannis, subtle toast and vanilla which provide a terrific back-drop to the aromas and flavours of blackberry, black cherry, tropical fruit, and spice from the grapes. With age, notes of coffee, mocha, and tobacco can be expected along with a mineral tang that forms as part of the lengthy finish. The wine is medium to full-bodied with bright ruby colour. Its charm will begin to show after six months of cellaring, and it should continue to develop for at least two years.

Castellina Supertuscan di Siena 4 - 3 - 0
Tuscany lies at the heart of Italian culture, language, literature and arts, and its rolling hills are immortalized in the work of many famous Italian painters. A bold, yet supple wine, Castellina Supertuscan is expansive enough to be consumed with great pleasure, the big, smoky, earthy nose of ultra-ripe cherry and currant fruit is followed by a richly tannic finish. Food Pairing: Serve with a rack of lamb with herbs, Tuscan-style meat dishes with tomato sauces, stoganoff or meat grilled rare.

Chateau du Pays
In the style of fine wines of the southern Rhône Valley. This wine derives its complex character from Syrah, Carignan, and Grenache grapes. Rich flavours suggestive of cherry, raspberry, blackberry, and plum combine with notes of pepper and chocolate. The finish shows a subtle herbaceous note and a suggestion of cedar and violets. American toasted oak adds the final harmonizing nuances. Shows well young but will continue to develop for over a year.

Dashwood New Zealand Pinot Noir 3-4 - 3-4 - 0
Dashwood Vineyards in Marlborough has alluvial clay layered with gravelly sub soils from the Wairau and Awatere River valleys, proving exquisite winemaking conditions. The vineyards of Delu Ranch enjoy typical Mediterranean climate and is gifted with sun soaked mornings and cool foggy nights that foster intense, mature flavours and a robust tannin structure. Lodi California Old Vines Zinfandel
Exhibits silken layers of multidimensional delight. It starts with an up-front core of blackberry and dark cherry aromas, followed by suggestions of blueberry, raspberry, cranberry, and dried plum. Undertones are of chocolate, almond and exotic spice. Ends with an unmistakable black pepper sensation. Seems to age indefinitely.

Mapocho Chilean Carmenère 2 - 4-5 - 0
Maipo Valley's warm dry summers and mild winters bring out the best in its native grape, Carmenère. Our Chilean Carmenère, fermented on Merlot Genuwine Winery Dried Grape Skins offers liberal flavours of fresh blackberries, plums and violet notes. Full-bodied, this exquisite wine treats the palate to the richness of French toasted oak with smooth silky tannins and succulent dark fruits. An excellent balance between freshness, fruit and structure gives an ample and impressively persistent finish.

This elegant ruby coloured Merlot features a rich aromatic bouquet of fresh red cherries, toasted oak and herbs. Languedoc-Roussillon (land-dock roo-see-onh) is one of the oldest and largest wine growing regions of France. Running from the sun-drench shores of the Mediterranean to the border of Spain and the Pyrenees mountains, it has a wine making history reaching back centuries. Sonoma Valley Cabernet Sauvignon 4 - 3 - 0
Located on the western edge of Sonoma’s Alexander Valley, hundreds of feet above the Russian River, Yeager’s Vineyard has a terroir of well drained rocky soils and west-facing sun-drenched slopes. Bright wild blackberry and cherry are complemented with abundant spice. Black pepper, vanilla, a hint of cedar, smoke and a characteristic note of cassis (blackcurrant) along with other red berry notes evolve over time to show a hint of dry chocolate on the finish. Finely knit together with a silky mid-palate, this wine has a rich tannic backbone for aging. Serve with roast beef and horseradish.

South African Pinotage
First created in South Africa in the 1920s by crossing Burgundy's delicate Pinot Noir and Rhône's robust Cinsault. It has become the trademark grape of South Africa. The standard for excellence in Pinotage demands fermentation on the skins and contact with new oak, during fermentation and during aging. Following these standards, we have chosen to import the skins and solids from the grapes as well as the juice they produced. A 2 litre pack of virgin, Pinotage skins and solids is included to heighten the wine's true varietal character. Our exclusive 2-stage oaking system utilizes French oak during fermentation then Hungarian oak cubes during the initial resting period to deliver the complexity and body so prized in the best Pinotage wines.

South Australian Single Vineyard Shiraz 4 - 3 - 0
Single-Vineyard Shiraz comes from Conundrum Vineyards on the Murray River, which meanders for thousands of kilometres through sun-drenched plains and sloping hillsides of South Australia. A medium-full bodied wine combines the fruit flavours of plum and currants with the silky-smooth taste of chocolate and firm tannins. Food Pairing: Goes well with beef stews or pot roast.

Sicily with its beautiful sun baked islands, rare summer rain consistently produces premium Syran wines. Zweigelt - Weingut Huber, Traisental Austria
Austria's most widely planted red is a cross between St. Laurent and Blaufrankisch. It has gained favour because of its appealing fruit and spice character. Dark cherry in colour. An opulent bouquet of red fruit including raspberry, cherry, and currant, stands against a background of vanilla, black pepper and a hind of licorice. The initially rustic tannins quickly mellow into a nicely structured state and contribute to a nice long finish.
